My mom used to do this for me and it always made the day better.
Today, I want to share the best banana bread recipe that is super easy to make. To be honest, I cant take all the credit, I actually searched various websites taking parts of different banana bread recipes from here and there and putting my own spin on things until I found the perfect recipe.
I encourage you to try this very easy to bake banana bread and tweak it if you want to what fits for you.
Sometimes I make it in loaf pans and sometimes I use muffin cups. Muffin cups are great to add to gift baskets for teachers, neighbors, friends or co-workers.
I have also doubled this recipe and it works out just fine.
*Preheat oven to 375 degrees

Ingredients
1 & 1/2 Cups All-Purpose Flour
1/2 Cup Sugar
1/2 Cup Brown Sugar
1 Teaspoon Baking Soda
1 Teaspoon Cinnamon
1/2 Teaspoon Salt
3 Medium/Large Very Ripe Bananas
1 Egg
1/3 Cup Vegetable Oil
1 Teaspoon Vanilla Extract
Directions
In a large bowl combine all dry ingredients.
In a large separate bowl, mash bananas, oil, vanilla an egg.
(I use a hand mixer on low)
Add dry ingredients slowly into wet ingredients until just until moistened
Pour into greased loaf pan or fill muffin cups half full
Bake for 15-22 minutes or until golden brown and a toothpick inserted near center comes out clean.
Cool for 10 minutes and remove from pan
You can add almost anything you want to this recipe. Feel free to add a half cup of raisins or walnuts for an even better taste and consistency. My favorite thing to add is about a half to whole cup of blueberries. OMG! It was to die for, so moist and tasty.
