THURSDAY, SEPTEMBER 25th

THE FIRST RAIN OF THE SEASON

Good morning everyone!
Well California finally got a little rain this early morning which is great for us affected by the drought.
If, you haven't heard, California is in a severe drought and we also have some violent wildfires going on, so every drop of rain really helps!
Well today is Thursday and all 3 of my kids are home. My 6 year old has a stomach bug, and the 12 and 17 year old say they are not feeling well, but between you and I, I know better. The girls are fine, but honestly I have been up for two night with my 6 year old so at this point I really didn't care.
It was nice to sleep in a little bit.

About 9am everyone started waking up and I was literally starving. I decided to make eggs and chorizo, one of my favorites, but these kids were not having it.
They each wanted something different for breakfast.
Yes, they are spoiled.
I started by making hard boiled eggs for the really sick one, followed by a roast beef cold cut sandwich for the 12 year old and the 17 year old was fine with Mexican hot chocolate.
Finally, the breakfast chore was done and I started to cook my eggs and chorizo, which I will share the recipe for at the bottom of this post.

As I am in the kitchen eating my breakfast, sipping on my coffee and checking my emails, I can hear the kids in the living room watching one of the cartoon channels. Yes my 17 year old still watches cartoons.
I think to myself how nice it is at this moment, delicious breakfast, hot coffee, sprinkling of rain, all is right in the morning.
THEN IT STARTS
I hear the bickering begin,
"Yes, they do!"
"No, they don't!'
"MOM!"
I'm seriously not feeling it today and I walk in to the living room.
Apparently they were arguing about aliens, whether or not aliens eat and need protein. Yes, I am serious.
As I roll my ears, I hear a word I haven't heard since I was a teen. Good to know "Butt head"is making a comeback.

Alright, enough about me and my morning.
How is your day going?

COMING SOON

I am really excited about the next coming month of my blog. There are going to be several different types of posts. I'm going to be talking about Halloween, Sharing Recipes & Party Ideas.
I am a Halloween freak! I try to go all out in decorations and party ideas. I cant wait to go into further detail with you guys.
I will also be featuring a segment on how to get more for your buck when it comes to cell phone plans, and of course there will be product reviews and maybe a giveaway or two!
OK, well I better get off here, I am in my room and I just heard a loud crash. Normally I wouldn't be so worried but, it became extremely quiet out in the living room. As, a mom, that is all bad.
I hope everyone enjoys their day today!

EGGS & CHORIZO RECIPE

1- 6-8oz package of chorizo (found in grocery store near sausage)
6- Large Eggs
Floured Tortillas
Use a large pan or skillet on medium high heat

The first thing you will want to do is add the chorizo to a preheated skillet.
You will need to open the package and squeeze the chorizo out of the sausage tubing. Now be careful because the oil from the chorizo has been know to pop.
Using a spatula, break up chorizo and cook for about 7-9 minutes.
This is when i like to drain the excess grease.
Now its time to add the eggs.
I personally just break the eggs right into the pan and throw the shells straight into the trash. I think clean up is easier this way.
Now turn your heat down to medium.
Scramble in eggs and cook until all is light and fluffy.
DONE!
Serve in warmed flour tortilla

Let me know what you think or if you have any variations for this recipe!

    1. It can also be great on the go. Wrap like a burrito and cover in foil.
