Anybody else excited tonight for The Walking Dead Season 5 Premiere?
I know this is a family blog but I just wanted to share my excitement with everyone. My family and I are actually all pretty obsessed with The Walking Dead. 
You know I don't like to give spoilers away so I will try and be as vague as possible when describing last seasons episodes but they were off the chain!
Last season (4) totally ended with a bang (literally)! We learned so much about the characters, who they are, and who they were. It really brought us the viewers closer to our favorite characters.
There were a couple episodes that we watched last season that completely shocked us, leaving us with our mouths wide open and speechless. Then there are the episodes where we actually jump up from the couch screaming with excitement! That's what I love about this show, it pulls us in so many different directions.
If you haven't noticed The Walking Dead is now pretty much a phenomenon that is sweeping the world.
Pretty much any where you go , people are talking about it.  I took my son to the barber shop and the two male barbers were actually holding a conversation and betting on who is going to meet their demise in the season 5 premiere, I had to put in my two cents and let them know that it better not be my favorite character Daryl Dixon played by Norman Reedus.

EASY HOMEMADE BEEF ENCHILADAS


While your waiting for The Walking Dead season premiere, why not try making these bomb enchiladas!
I make enchiladas every few months and I have finally found the most easiest way to make them and I want to share it with you! These are so tasty that you will want to share them with anybody. This recipe makes about a total of 30 Enchiladas.
You will need the following:
* 1 Medium  Beef Roast
* White or Yellow Corn Tortillas
* 2 Large Cans of Red Enchilada Sauce
* 4 Cups Grated Cheddar Cheese
* 4 Cups Grated Monterrey Jack Cheese
* Sliced Black Olives
* Diced Green Onions

First thing you want to do is place your roast in the crock pot. You can cook it on high if your in a hurry.
Season with your favorite spices. I use salt, pepper, garlic and onion salt.
After a few hours, open a can of red enchilada sauce and pour it into the crock pot. Continue cooking until meat is tender and can be pulled apart with a fork. This will give you time to grate your cheese and dice your black olives and green onions.
I cheat. I buy my cheese already grated and my olives already sliced.
Once meat is tender enough, I turn off the crock pot and then I add 2 cups of each cheese into the meat and sauce. Stir until evenly combined.
Go ahead and taste it, What do you think so far?
OK, this is the fun part. 
Make sure you have a nice roasting pan, pre-greased and get ready to roll those enchiladas.
I divide up my tortillas to about 10 at a time, heat them in the microwave for about 1 minute. Be careful they are hot to the touch now.
Take 1 tortilla and fill generously with contents of the crock pot. It is easier just to use a flat spatula and place meat near one side. then roll. Now it will kind of resemble a naked enchilada. Place on pan. Continue with the other 9. Then repeat process again until you have used all the tortillas.
When finished, and all the tortillas are filled and rolled, open 2nd can of enchilada sauce. I like to shake my can first. Then pour evenly onto enchiladas. Follow by adding remainder of cheese then garnish with black olives and green onions.
Bake in pre-heated oven at 350 degrees.

I like to serve them with rice, refried beans and sour cream!
